Hi everybody!
I’m finally back working on my blog. I took a long break to settle into and just enjoy the new life that I am living now.
Many things have changed for me over the last year. I’m happier and more at peace than I have been in a long time.
I realized after a week or two of my new stress-free life that what I had thought were additional food allergy problems were not bothering me anymore. I had no idea how stressed I really was. I also didn’t have a clue how unhappy I had been until my situation changed. I immediately felt energetic and incredibly happy again. It was really a shock to find out that I had actually been depressed without realizing it.
I’ve been doing a lot of cooking and have come up with many new recipes that I can’t wait to share with you.
Since our Arizona summers are so hot, I do all of my baking during the cooler winter months. Lately I have been playing with a lot of muffin and cookie recipes. My new Carrot Cake Muffins have 3 cups of shredded carrots and 1/2 cup of chopped pineapple, so they are very moist and taste incredible.
I still have a very long list of recipes that I want to test before it gets hot again.
Healthy, great tasting, gluten free food with less sugar will continue to be the focus for my recipes.
Gardening has become a very enjoyable part of my life again. Frank and I love watching the hummingbirds as they zoom around the flowers and chase each other in and out of our yard. Everything that we plant is chosen because it has blossoms that attract hummingbirds and butterflies.
It doesn’t get any better than sitting on your patio before sunset, just enjoying beautiful flowers and letting the hummingbirds entertain you!

Thank you so much Lauri, Eleanore and Sarah! Writing that post took the longest of any that I have ever written! It was so hard to decide how much of myself to put in there. Writing about recipes is easy because I am just telling about something that is non-personal.

Hi Andrea:
I am going to try the carrot cake muffins. The muffins I most miss since being gluten free are Bran Muffins! I just have not been able to get that taste.
Any ideas?

Hi Kim, I just made Apple Bran Muffins a few days ago and used a millet and rice cereal that had oat bran in it. If you can have oat bran, then I think you will love these new muffins. If you can’t have the oat bran then I can try to find another cereal to substitute in it’s place. I will also be converting my regular plain bran muffin recipe to gluten free this same way.
