This is a recipe that I will be taking lots of different flavor directions this summer. It is a perfect warm weather dessert because you don’t heat up the house making it.
This Strawberry Dessert was one of my Mom’s recipes from years and years ago. It is really healthy because it’s made with rice milk and gelatin, and only a little bit of sugar.
To make it, you sprinkle the gelatin over 1/2 cup of cold water in the blender. Then you add 1 cup of rice milk that has been heated just to boiling. Blend that mixture at low speed for about 2 minutes, add sweetened strawberries and puree. That’s it! It will set up in your refrigerator in about 3 hours.
It would be even more beautiful if it was garnished with more sliced berries and some fresh mint leaves.
This pudding would be great made with fresh cherries, any other berries, or even hydrated dried apricots with some apricot nectar.
This would be a super healthy choice for Moms with kids of any age.
I didn’t really notice the strawberry seeds as I was eating this pudding but you could always blend the strawberries by themselves first and strain the seeds out before proceeding with the recipe if they are going to bother you.

Wash, hull and slice strawberries and place in a bowl. Add sugar and stir to coat berries. Set berries aside.
1 quart strawberries (6 and 1/2 cups sliced)
1/4 cup plus 2 tablespoons sugar (or to taste if you prefer sweeter)
Place cold water in your blender jar. Sprinkle with gelatin and let stand 3-4 minutes.
1/2 cup cold water
2 envelopes unflavored gelatin
Add 1 cup of rice milk that has been heated to boiling, then process gelatin and rice milk mixture for about 2 minutes. The gelatin should be completely dissolved.
Add about 6 cups of the strawberries to the blended mixture- reserve at least 1/2 cup for garnish of the chilled pudding. Puree strawberry mixture until smooth.
Pour mixture into a nice bowl and chill in your refrigerator for about 3 hours.
Spoon into serving dishes and garnish with reserved sliced berries and some mint leaves. If you can have dairy, whipped cream makes this pudding taste like strawberry shortcake.
