Cauliflower Chopped Salad

 

I created this recipe with ingredients that you might find in a really great pasta salad, except I used cauliflower in place of the pasta so it would be low carb (and gluten free!)

You will find artichoke hearts, sun dried tomatoes, salami, basil and lots of other great vegies besides the cauliflower.  It is beautiful to look at, which I think is important with any salad and the flavors are fun together too.

    Thanks for the recipe Andrea. It sounds great. I am going to try this, but leave some of it like the cauliflower raw.
