This Mango Salad Dressing would be perfect with my Asian Slaw. It would also be great with any Southwest or Mexican food themed meal. It’s yummy anytime!
The mango flavor is pronounced and the other herbs and spices add a nice background without overwhelming the mango.
I used Ceres mango juice, but you can use any brand. Many stores carry cans of tropical fruit juice in cans, either in the regular juice aisle or in the Hispanic food aisle.
You could also make this dressing with papaya juice, or any other juice that sounds good to you.
Place all ingredients in blender or food processor and blend.
3/4 cup mango juice (I used Ceres which was a blend with other juices)
3 Tblsp shallots or onions, minced (saute briefly in 1/4 cup water first if “hot”)
1 Tblsp cilantro, minced
1/8 teaspoon dry mint, crumbled
2 Tblsp Mexican lime juice
1 teaspoon Jalapeno or red Fresno pepper, minced (to taste)
1 Tblsp extra virgin olive oil (it gives the dressing a buttery taste)
1/8 teaspoon cumin
1/8 teaspoon ground corriander
This recipe makes about 1 cup of dressing.
