If you have been following my blog, you know that I always talk about Authentic Foods flours because they are more finely ground than commercial brand gluten free flours that you can buy off the shelf. This results in wonderful baked goods that do not have that “gritty” feel when you chew them like so many products that we all tried in the beginning.
Steven Rice, the founder and president of Authentic Foods has an extensive background in the culinary industry as well as a degree in biochemistry from the University of Southern California.

I probably would make a carrot cake using 1 pound
of grated carrots, olive oil and scant sugar. Cinnamon,
freshly grated nutmeg and cloves go into the batter as well. Thanks for posting about Steve & his Authentic Food flours. Have been using a nice grade of flour plus
a bit of oat flour but would love to experiment with
Authentic Food items.
With the giveaway items I would bake things for my mom and me for the Holidays. We are both gluten free and have a hard time in our seperate small towns finding items that are a reasonable cost and tasty that are gluten free. I would bake my mom Holiday Breads with the flour, Datenut, Cranberry Spice and Zuchini. I would also use the vanilla bean cake mix to make a mini wedding cake for me, my mom and my aunt to eat at my wedding.

After three years gluten free, I don’t even like the taste of goods made with wheaten flours anymore! But I do still love baking..and I’d use these to make shortbread and blondies for some GF friends!

This would be amazing to win! I’m allergic to wheat and my sister is gluten intolerant. I’d use the cake mix for a strawberry-topped cake that I’ve been craving. Other than that, where to begin with the baking??? Pumpkin pie, hamburger buns, breadsticks, and muffins are just a few of the things on my list to make.
